Start by ensuring your lamb chops are at room temperature. Season them generously with salt and pepper on both sides. This allows the flavors to penetrate the meat more effectively.
Preheat your oven to 400°F (200°C). While the oven is preheating, you can start preparing the garlic and rosemary mixture.
Finely chop fresh rosemary leaves and mince garlic cloves. Mix them together in a small bowl along with some olive oil. You can adjust the quantities based on your preference for garlic and rosemary flavor.
Heat a skillet or cast-iron pan over medium-high heat. Once hot, add a little olive oil to coat the bottom of the pan. Carefully place the lamb chops in the pan and sear them for about 2-3 minutes on each side until they develop a golden-brown crust.
After searing both sides of the lamb chops, reduce the heat to medium-low. Add the garlic and rosemary mixture to the pan, spreading it evenly over the chops. Allow the garlic and rosemary to infuse their flavors into the lamb for about a minute, stirring gently to prevent burning.
Once the garlic and rosemary have had a chance to flavor the lamb chops, transfer the skillet to the preheated oven. Cook the lamb chops in the oven for about 10-15 minutes, depending on the desired level of doneness
Once cooked to your liking, remove the lamb chops from the oven and transfer them to a plate. Tent the plate loosely with foil and allow the lamb chops to rest for a few minutes. This allows the juices to redistribute throughout the meat, ensuring it stays moist and tender.
After resting, serve the lamb chops hot, garnished with additional fresh rosemary sprigs if desired. They pair well with roasted vegetables, mashed potatoes, or a simple salad for a delicious and satisfying meal. Enjoy!
