Pulled Pork Quesadillas Recipe

1. Prepare the pulled pork 

If you're using leftover pulled pork, you can skip this step. Otherwise, you'll need to cook the pork. You can use a slow cooker or pressure cooker for this. Season the pork with salt, pepper, and your favorite spices. Cook until the pork is tender and easily shreddable.

2. Shred the pork 

Once the pork is cooked, shred it using two forks or your fingers. Remove any excess fat or bone if necessary.

3. Heat a skillet 

Place a skillet or a griddle over medium heat and let it warm up.

4. Assemble the quesadillas 

Take one flour tortilla and sprinkle a layer of shredded cheese evenly over half of the tortilla. Then add a generous portion of pulled pork on top of the cheese. If desired, add any additional toppings such as diced onions, bell peppers, or jalapeños.

5. Fold the tortilla 

Fold the tortilla over the filling to create a half-moon shape, pressing gently to seal.

6. Cook the quesadillas 

Place the assembled quesadilla onto the heated skillet. Cook for 2-3 minutes on each side, or until the tortilla is golden brown and crispy, and the cheese is melted.

7. Repeat 

Repeat the assembly and cooking process for the remaining tortillas and filling.

8. Serve 

Once all the quesadillas are cooked, transfer them to a cutting board and cut each quesadilla into wedges. Serve hot with your favorite toppings such as salsa, sour cream, and guacamole on the side.
